Observation: Temperature of ingredients (pesto sauces, salsa etc.) in the big preparation cooler registered 9-10 degrees C at the time of inspection.
Corrective Action(s): Repair or service the cooler so that it is capable of maintaining all food items in the top inserts at or below 4 degrees C.
In the interim, all inserts must be stored in the bottom section or walk-in cooler. (Immediately). Check internal food temperatures for items in the inserts at least once a day in addition to checking the air temperatures.
