- sanitizer bucket had 100ppm chlorine
- wiping cloths must NOT BE RINSED OF chlorine sanitizer prior to wiping the table; the bleach is there to kill bacteria
- wipe food contact surfaces with bleach sanitizer (100ppm bleach) then allow to air dry prior to usage
