Observation (CORRECTED DURING INSPECTION): No soap or paper towel available at three compartment sink. Operator refilled paper towel dispenser and placed hand soap at three compartment sink at time of inspection.
Corrective Action(s): Ensure hand wash stations are equipped with soap, paper towel and hot/cold running water at all times.

209 - Food not protected from contamination [s. 12(a)]
Observation: Noted ice machine on site on lower shelving unit under work table. When inquired about how ice is dispensed staff said they used gloved hands. Manager said ice machine is emptied and thoroughly washed and sanitized about once every 2 weeks.
Corrective Action(s): 1. Place ice machine on higher level table 2. Obtain a proper scoop to dispense ice. Ensure scoop for ice is stored outside of the ice in a separate container. 3. Ensure ice machine comes a part for easy cleaning/sanitizing. Obtain a brush to get into hard to reach areas of the ice machine.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris, build up and stains noted in the following areas: around mop sink, under and around three compartment sink, under shelving units and work tables, along the perimeter of the walls, on shelving racks.
Corrective Action(s): Do a thorough cleaning in the above noted areas. Focus on the hard to reach areas.

Comments

All other hand wash stations (except at 3 compartment sink) were fully equipped with soap, paper towel, hot and cold running water.
All coolers 4C or less (walk in, under counter, prep cooler..etc) Note: Inserts just filled for lunch rush. Keep out small portions to ensure turn over rate of 2 hrs or less if unable to maintain 4C or less. Place lids on inserts to help maintain temperature.
Walk in freezer -16C and undercounter freezer - 12C
No obvious sign of pest activity noted at time of inspection.
Ice machine appeared clean
Quat sanitizer at source, in sanitizing compartment of ware washing sink and in containers with cloths submerged 200ppm.
Manual ware washing procedures reviewed at time of inspection – no concerns. 3 drain plugs available.
All stored foods appeared protected (ie. stored off the ground, covered, lights in food prep areas had covers..etc)
