Observation (CORRECTED DURING INSPECTION): Two pizza were left on the display table measured with an internal temperature of 56C. Manager stated pizza should be time track for every 2 hours. However, written time tracking records were not available.
Corrective Action(s): Staff confirmed the pizza were cooked 20 minutes ago. Immediately record the time when pizza were cooked. If time tracking is used, written records must be available for review on site.

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher registered 69C at plate level after 3 runs. A minium of 71C is required at plate level to ensure proper sanitizing of food contact surfaces.
Corrective Action(s): Manually clean and sanitize all equipment and utensils sanitized by the dishwasher today. Do not use the dishwasher for sanitizing until serviced and temperature verified. Manually dishwashing at the 3 compartment sink was set up.
