Corrective Action(s): Deep clean behind and underneath equipment and floors and walls so they are visibly clean and free of dirt/debris. Correct by June 22, 2022.
Consider increasing the frequency of cleaning in these areas to prevent build-up.

Routine Inspection

-Hand washing sinks fully equipped (except the one near the dishwashing area) with hot and cold running water, liquid soap and single use towels.
-Coolers were at 4 C or below.
-Freezer in kitchen was -18 C or below.
-Basement freezer was at -14 C (was in defrost cycle).
-Food is re-heated to 74 C or kept at 4 C in designated carts. Staff verify temperature by probing cold water that is placed in both the hot and cold side of the unit.
-High temperature dishwasher registered at 77 C on plate surface during the final rinse cycle.
-Quats surface sanitizer registered at 200 ppm from dispensing station.
-Temperature records maintained.
-Staff aware of monitoring actions and corrective actions - good.

Reminders:
**Follow instructions on label when thawing foods (eg. cooked salmon: "Keep frozen until used. Remove all packaging. Thaw under refrigeration or prepare from frozen.")
**Pressure of hand washing sink at the entrance/close to the office is very high causing a lot of splatter. Lower the pressure.
**Re-stock paper towel at the corner hand sink located near the dishwashing area (manager stated this area is not used often by staff).
