Observation (CORRECTED DURING INSPECTION): Too much chopped lettuce (insert and large container) stored in broken prep cooler at approximately 15-17°C. Operator is currently trying to bring out enough lettuce to use within a 2 hour period.
Corrective Action(s): Move large bucket of lettuce to walk-in cooler. Continue the practice of limiting all perishable foods in this cooler to an amount that can be used up in 2 hours.
