Coolers at 4 degrees C or less.
Freezers at -11 to -22 degrees C.
Hot holding internal food temperatures at 60 degrees C or more.
Probe thermometer(s) on site.
Temperature records available and up-to-date.
Raw food items not observed to be stored above ready-to-eat food items.
Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels (including staff washrooms).
Non-latex gloves available.
Quaternary ammonium compounds (quats) sanitizer available from dispensing units and in labeled spray bottles at 200 ppm.
Low temperature dishwasher measured 47 degrees C and 50 to 100 ppm chlorine in the rinse residual at the utensil surface. Dishwasher records maintained.
Quats and chlorine test strips on site.
Ventilation canopy in clean condition.
No signs of pest activity observed at time of inspection. Pest control reports reviewed at time of inspection.

Discussed: 1. Ensure hard to reach areas are being routinely cleaned and sanitized to limit accumulation of grease and/or debris.
2. For bar area, glasses are to be stored away from hand washing station or suitable splash guards are to be in place to protect glasses from potential splashing.
