Observation (CORRECTED DURING INSPECTION): Multiple variety of pre-made sandwiches and quiches displayed at room temperature and intended for consumption (not including salmon sandwiches) in front retail area. Also noted multiple layers of eggs displayed on counter in bakery. Discussed with operator potential impact of extended time at room temperature will impact risk of these foods.
Corrective Action(s): New quick oven to come into operation for ready-to-eat foods at retail station. Operational changes to include "display only" for all sandwiches/quiches etc. similar to salmon sandwiches to be implemented immediately.

Observation: Selection of areas in premises, including the bakery area observed with mouse droppings. Some secondary food contact surfaces i.e. dough mixers and storage shelves notable for minor accumulations. Pest Control contract in place and traps noted throughout.
Corrective Action(s): Keep up with daily cleaning of key equipment and work surfaces. Monitor secondary surfaces like shelving to ensure no accumulations of mouse dropping observed for multiple days. Continue to monitor for mouse activity and plug access points accordingly.

**Wall at sandwich prep station in the back is deteriorated and wall may be flaking onto the work surface. Target this wall for long-term repair as discussed.
**Target left side floor of walk-in cooler for cleaning. Food debris and liquid accumulations noted (minor).
**Defrost small domestic fridge in kitchen.
Cooling units below 4 C in front and back of premises.
Freezers approximately -18 C or below.

General sanitation and organization is very good at time of inspection. Most food handling practices very good. A couple of areas need attention.
