Observation (CORRECTED DURING INSPECTION): Ukranian Sausage was out on counter at room temperature. 9 Degrees Celsius. Staff thought it was shelf stable. While saugage does have some additives to extend shelf life, it is not shelf stable and must be kept cold - < 4 Degrees Celsius. Moved to fridge.

Observation (CORRECTED DURING INSPECTION): Utensils kept in open bins on shelves, mouse droppings on shelves & in bins.
Discussed with staff - Utensils are run through commercial dishwasher before use. Replace open bins with rodent - proof containers for extra protection.

Observation: Mouse droppings on shelves. All food is kept in fridges or rodent-proof storage, good. Continue trapping, and cleaning & sanitizing all surfaces. Look for entry holes and fill with steel wool or other rodent-proof materials.

Overall premise is very clean & well maintained. Bleach solution used for sanitizing counter tops is far too strong - use only 1 tbsp. per gallon.

Using too much bleach leaves residue on surfaces; also will bleach out clothes and be very hard on hands. Also could damage eyes if droplets get in eyes. Using the proper amount eliminates these hazards.
Dishwasher reached 79.6 Degrees Celsius at plate level as pere min/max thermometer. Good.
Hand sink is stocked. Good.
