Observation (CORRECTED DURING INSPECTION): Some pieces of pizza and fried chicken in hot holding unit measured to be between 48C-54C.
Corrective Action(s): All hot held food items must be held at 60C or hotter. Ensure heat is turned on high enough in unit, and ensure all bulbs are working. Staff adjusted heat of unit at time of inspection, unit measured to be above 60C by end of inspection.

Observation: One bulb in hot holding unit was not working at time of inspection.
Corrective Action(s): Fix hot holding unit such that all bulbs are properly working. Temperature inside hot holding unit must be at or hotter than 60C at all times in all areas of the unit.

Comments

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 200 ppm in bucket
- Raw chicken marinade was in use and out at room temperature. Staff stated marinade is only used for half an hour at a time, then returned to cooler after the first use, and discarded after the second use.
- All coolers were measured to be at or below 4C
- All freezers were measured to be at or below -18C
- Ice cream machine and cappuccino machine maintained in sanitary conditions
- Food storage practices satisfactory. Reminder no food must be stored directly on the floor in walk-in cooler/freezer.
- Back storage area now has better separation between food/food-related items and cleaning products. Please maintain this.
- No signs of pest activity noted at time of inspection
- Ice machine not in use.
- Food service area cupboards currently being renovated. No renovations to occur during operating hours.
