Observation (CORRECTED DURING INSPECTION): Box of onions (uncovered) was stored in recycling room next to bags of dirty empty cans/recycling.
Corrective Action(s): Move onions out of this room and do not store them here anymore.

Observation (CORRECTED DURING INSPECTION): 1) Dirty/used baking trays were put back onto the rack with clean baking trays.
2) General sanitation in kitchen can be improved. Ensure to clean dishwashing area thoroughly.
Corrective Action(s): Take all dirty trays out and wash/rinse/sanitize them before you put them back onto the clean tray rack. Ensure to clean all hard to reach areas thoroughly.

Routine inspection conducted:
-All handsinks equipped with liquid soap, paper towels, hot/cold running water.

Front servery area
-Pie cooler at 3 deg C
-Upright domestic cooer/freezer: 3.1 deg C (cooler) and -11 deg C (Freezer)
-Quat sanitizer spray @ 200ppm Quats, stored underneath sink **keep this spray available at all times
-Hot held soups at 60 deg C or greater.

Kitchen

-Walk in cooler at 3.1 deg C
-Walk in freezer at -15 deg C
-All other coolers at 4 deg C or less
-Freezers at -18C or less (there is also a chest freezer upstairs and another in the recycling room).
-Sanitizer in rag bucket at 100ppm chlorine.
-2 compartment sink and chemical dishwasher present, dishwasher achieved 50ppm chlorine residual.
-No signs of pests; operator must keep pest control reports on site and available at all times (it was not available at time of inspection). Report to be available by follow up inspection.
