Observation: - During time of inspection, handwashing station located on main cook line was not dispensing an adequate supply of hot water
Staff informed that they use the handwashing station located behind main cook line to wash hands
- Bar handwashing station did not have paper towels available at handwashing sink - CORRECTED DURING TIME OF INSPECTION
Corrective Action(s): - Ensure this is serviced/ repaired immediately, all handwashing stations in food premises must always be equipped with hot/cold running water, liquid soap and paper towels

Observation: During time of inspection, observed:
- Moderate fruit fly activity in kitchen by cutting boards
- Mouse droppings observed in electrical room around hot water tank
Corrective Action(s): - Continue to adhere to daily cleaning and maintenance program
- Ensure to keep all garbage covered
- Ensure to remove all mouse droppings in electrical room and further clean and sanitize this areas, this will determine whether there is a current rodent infestation

Observation: During time of inspection, observed undercounter cooler closest to sink in main cook line to be leaking
Corrective Action(s): Ensure this cooler is serviced/ repaired, all equipment must be kept in good repair

Observation: During time of inspection, numerous bottles were located throughout premises which were not accurately labelled
Corrective Action(s): Ensure that staff are re-trained with this process
Ensure all staff are aware of the different chemicals and using the correct spray bottles to store

- Main Cook Line:
* Undercounter coolers at 4C (Ensure inserts are not overfilled)
* Undercounter freezer at -18C
* Hot holding unit at 60C or above

Bar Area:
- Glasswasher dispensing adequate iodine concentration at final rinse (12.5ppm)
- Coolers at 4C or below
- QUAT sanitizer at 200ppm (see above noted infraction for labelling of bottles)
- General sanitation of bar - OK

- QUAT sanitizer from dispenser at 200ppm
- QUAT sanitizer available throughout facility, concentration at least 200ppm (see above noted infraction for labelling of bottles)
- Low temperature dishwasher available, adequate chlorine residual being dispensed at final rinse (50ppm)
- Ensure test strips are available for monitoring sanitizer concentrations
- Temperature logs available, ensure logs are dated
- Probe thermometer available for monitoring temperatures
- Ecolab services facility on monthly contract, July 2016 report indicates no pest activity
