Observation (CORRECTED DURING INSPECTION): Ready-to-eat foods (i.e: cooked meats, noodles, and sauces) stored in a stand-up cooler measured at 7C air ambient temperature. Ready-to-eat foods' internal temperature measured at 4C.
Corrective Action(s): Move all ready-to-eat foods from the stand-up cooler to a cooling unit able to hold an air ambient temperature of 4C or lower.

Observation: Kitchen floors has accumulation of grease. Underneath the cook line and on the floor in the walk-in cooler have accumulation of grease built-up. Exhaust hood observed to have a built-up of grease. Operator informed that an external cleaning company will be contracted to do a deep clean of the floors monthly.
Corrective Action(s): Clean and disinfect the kitchen floors and underneath the cook line to prevent built-up of grease. Service the exhaust hood to remove built-up of grease. Follow sanitation plan on regular cleaning of kitchen floors and exhaust hood. Corrected by: Immediately.

Routine Inspection conducted today.
Communicable Disease compliance conducted. COVID-19 Safety Plan onsite and posted. Mask policy in place. Physical distancing and handwashing signs in place. Sanitizer available for customer use. Signage posted at front door to advise people who display COVID-19 symptoms to not enter. Plexiglass barrier in place at front entrance. Maximum occupancy limit of 49 posted at front entrance. Customer contact information collected for contact tracing purposes. Daily health check and temperature check for staff conducted.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottles at 200ppm. High-temperature dishwasher measured at 71.1C at the plate level.
Prep cooler and walk-in cooler measured at 4C. Chest freezers measured at -18C. Rice cookers measured between 64-89C. Refrigeration temperature logs are well maintained.
No signs of pests observed.
Ice machine in sanitary condition.

NOTE: Food under "Hold" from report#JCHY-C4FTLD is still within facility unaltered.

Overall, facility is well organized.
