Observation: Ice machine observed with mold build-up. Staff removed ice during time of inspection.
Corrective Action(s): Clean and sanitize the ice machine as per manufacturer instructions to remove mold build up and to prevent foodborne illness. Ice machine is not be in use until sanitized and verified by the health inspector.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer measured at 0 ppm chlorine concentration with test strip. Operator prepared bleach solution during time of inspection which measured at 200 ppm chlorine concentration.
Corrective Action(s): Ensure bleach solution is changed every day to maintain concentration of 200 ppm to adequately sanitize food contact surfaces and to prevent foodborne illness.

Observations:

1. Temperatures:
- Display cooler at 4C
- Under counter drink cooler at 3C
- Under counter bar freezer #1 at -18C
- Under counter bar freezer #2 at -18C
- Thermometers available in cold-holding units

2. Sanitation:
- General sanitation of premises satisfactory except above noted violations
- Handwashing station supplied with soap, paper towel, hot and cold running water
- 3-compartment sink available for manual warewashing

3. Pests:
- No signs of pests during time of inspection

4. Administration:
- Operating permit visible during time of inspection
