Observation:
1. Inside of the back prep cooler is in need of cleaning.
2. Ventilation canopy requires a deep cleaning. Service of the ventilation hood is due for July 2021.
Corrective Action(s):
1. Clean inside of the back prep cooler, including the rubber seals.
2. Clean panels and accessible areas of the ventilation canopy. Ensure the ventilation hood is cleaned frequently to prevent a fire hazard.

Observation (CORRECTED DURING INSPECTION):
Front hand washing station for sushi preparation area was blocked with cutting boards and utensils.
Corrective Action(s):
Clear area in front of hand washing station and ensure hand sink is easily accessible at all times.

Observation:
- Several dry products, such as bags of rice, sugar, corn starch, have opened bags.
- Several dry products, such as containers of flour, did not have lids on the containers.
- Several dry products stored directly on floor underneath preparation tables.
Corrective Action(s):
- Ensure all dry products are transferred to a food grade container once they have been opened. To be corrected today.
- Ensure all containers have proper lids/food grade covering on them. To be corrected immediately.
- Ensure all food products are stored at least 15 cm off the floor to prevent access from pests and for easy cleaning under equipment/preparation tables.
- All food products need to be protected from contamination.

Observation:
General sanitation of facility needs improvement, especially in the following areas:
- Underneath all equipment and sinks
- All shelves for dry storage
- Hard to reach areas

Routine Inspection:
Despite that the sushi preparation area hand sink was obstructed (see violation above), all hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- All coolers maintained at or below 4 degrees Celsius.
- All freezers maintained at or below -18 degrees Celsius.
- Hot holding (rice and miso soup) maintained above 60 degrees Celsius.
Thermometers present in all coolers.
Concentration of bleach (chlorine) sanitizer in bucket = 100 ppm. Wiping cloth stored in sanitizer solution - very good.
High temperature dishwasher sanitizing with >71.3 degrees Celsius at dish level after final rinse cycle.
Ice machine maintained in a sanitary condition. Ice scoop stored on designated plate.
Washrooms clean and hand sinks fully equipped with liquid soap, paper towels and hot/cold running water.
No signs of pest activity at the time of inspection.

Some COVID-19 safety measures in place, including:
Hand sanitizer available for customers.
Physical barrier present between staff and customer at cash register.
Maximum occupancy limit posted.
All staff and customers adhere to wearing proper face masks.
