Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Line prep cooler not properly cold holding perishables at 8c. The perishables were recently loaded into the cooler and were relocated to the walk in cooler at time of inspection.
Deep fryer batter observed being stored at room temperature.
Correction: Either store batter in a ice water bath slurry or keep inside a cooler when not in use.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Meat slicer observed not properly cleaned after use
2 knives observed on the clean magnetic holder with food debris affixed. These were removed to be cleaned
Correction: Ensure staff have been trained on how to properly clean and sanitizue the slicer after use.
Ensure staff are aware soiled knives are to be warewashed afer use

Dishwasher repaired. New pressure gauge installed. Final rinse tested at 73.4c on front side and 73.3c on back side (Peak holding thermometers at plate level.)
Damaged Screen door repaired
Meat slicer covered and stored on the shelf
Fryer batter stored in ice water slurry.
Caulking and wall cleaned on wall adjacent to dishwasher
