Observation (CORRECTED DURING INSPECTION): Wiping cloths were stored in a bleach water solution at 10 to 50 ppm chlorine. Solution appeared soiled.
Corrective Action(s): Bleach water sanitizer was prepared at 100 ppm chlorine. Ensure that wiping cloths are stored in a bleach water solution at 100 ppm chlorine for effective sanitizing. Ensure that bleach water sanitizer is changed at a frequency needed to maintain its concentration.

Observation: The following was observed in the prep cooler and walk in cooler:
1. Food items stored in open cans
2. Double stacking of food containers without a protective barrier
3. Use of take out containers for food storage
4. Uncovered food items
Corrective Action(s): This is a repeat violation. Canned foods were transferred to food grade containers at time of inspection. Double stacked items were unstacked and covered at time of inspection. Ensure that all food items stored in take out containers are transferred to reusable food grade containers and are properly covered. Date to be corrected by: Today.

Walk in cooler was measured at 2 degrees C (ambient) and internal temperatures of probed food items were measured at 3 to 4 degrees C.
Internal temperature of cooked rice was measured at greater than 60 degrees C
Hand washing sinks are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
Scoops are stored with handles outside of food product
Mesh bag of onions stored safely
Rusted meat cleaver was not observed on site
Utensils were stored in sanitary condition in a clean container
