Follow up inspection.
Today, "au jus" is being kept in the steam table. The hollandais sauce being hot held on the grill is kept at 60 C/ 140 F (or hotter) - good.
Reviewed knife and utensil storage. Utensils are stored in the food prep/cooking area in an insert with ice for temperature control. Water is changed when ice melts.
For utensils used continuously throughout the day, wash/rinse/sanitize/air dry utensils every 4 hours. Check and compare with your corporate sanitation plan and notify EHO if there are any discrepancies.
Backsplash behind the stainless steel prep sink has been temporarily covered and is to be smooth and in good condition so that it can be easily cleaned.
*** Continue to make sure that the floor in hard to reach areas is cleaned on a routine basis as per your cleaning schedule.
