Observation: Door seal of walk in freezer was missing on one side and worn out on the other sides. This could be the potential cause of ice build up around the walk in freezer door and inside the freezer. This could affect the ambient temperature of freezer in long run.
Corrective Action(s): Please service the walk in freezer and replace the broken door seal.

Observation: In operator's absence, no staff on duty has valid FOODSAFE Level 1 or equivalent. Supervisor stated that she has registered for FS Level 1 class to be held on Feb 15. A copy of course registration was verified.
Corrective Action(s): Please ensure that in operator's absence, at least one staff on duy has valid FOODSAFE Level 1 or equivalent.
- Schedule the staff accordingly to ensure compliance.
- Submit a copy of staff's valid FOODSAFE Level 1 certificate or equivalent by Feb 20, 2024.

Routine inspection conducted.

Findings:
- General sanitation of the facility was satisfactory.
- Temperature of prep coolers, walk in cooler & stand up coolers recorded at or below 4C
- Stand up freezers recorded at or below -18C
- Walk in freezer recorded at -14C
- Random hot holding units were checked for internal temperature and recorded above 60C
- Cold potentially hazardous food stored at room temperature on sandwich/burger assembly line is time tracked. Staff stated that it is discarded after 2 hours.
- All handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 200ppm QUATS solution recorded in spray bottle and 3rd dishwashing sink.
- Low temp mechanical dishwasher found in good working condition. 50ppm chlorine residual recorded during rinse cycle.
- Back storage room is well organized.
- Ice machines were observed free of build up and scoops were stored outside in sanitary manner. Good.
- Food storage practices were found satisfactory.
- No signs of pest activity observed.
- Back door was properly closed.
- Mechanical traps observed throughout the facility.
- Pest control company's recent inspection report verified. No concerns.
