ITEMS CORRECTED: - Cleaning has occurred ITEMS TO BE CORRECTED: - Dishwasher booster requires repair. Part is on site. Electrician to be at facility in 30 minutes for repair. Ensure no dishwashing occurs prior to repairs. Any dishwashing that is necessary can be carted over to "Personas" until such time as repairs are made. Ensure dishwasher is repaired and final sanitizing rinse of greater than 71 degrees Celsius is consistently maintained. Today dishwasher was fluctuating between 68 and 71 degrees Celsius. Head Chef stated part needs replacing in booster unit.
