Observation (CORRECTED DURING INSPECTION): Boxes and containers of raw meat skewers observed stored at room temperature on kitchen floor. Temperature of meat was at 5C to 7C. Operator indicates these are for rush orders and was taken out of the fridge in the last 40 minutes.
Corrective Action(s): Do not store potentially hazardous foods at 4C or above. Only take out small portions to be used in small periods of time (within 20 minutes). Over 10 boxes of raw meat at room temperature is too much. Potentially hazardous foods (meats) stored at above 4C for more than 2 hours is to be discarded. Store all meats in cooler at 4C or below until it is needed.

Observation (CORRECTED DURING INSPECTION): Food Permit was stored behind business Permit and not visible.

Observation: 1. Many containers of food being stored directly on the floor.
2. Sealed bags of frozen seafood being thawed in cold water in hand washing sink.
3. Open bag of bulk rice in kitchen.
4. One pair of tongs stored at room temperatuer used for the cooked potatoes.
Corrective Action(s): 1. Do not stored food products directly on the floor. Store containers of food on shelving or at least 15 cm off the floor,.
2. Do not do food prep in hand sink. Use a food prep sink. (CORRECTED AT TIME OF INSPECTION)
3. Open bulk bags of food need to be stored in food grade containers with lids.
4. Store the utensils directly in the hot holding unit to keep hot. Use a serving spoon instead like the rice. Ensure handles stay clean.

Hot holding unit #1 rice and potatoes at 66.2C, #2 sauce inserts at 82C.
Donair meat undergoes secondary critical control step on grill before it is served at above 74C.
Ice machine was sanitary with dedicated scoop.
