Corrective Action(s): Clean and sanitize cleavers immediately.

Observation (CORRECTED DURING INSPECTION): High temperature washer again not reaching adequate sanitizing temperature:

Tested multiple times at plate level:
1st cycle: 65.8 deg C
2nd cycle 66 deg C
3rd cycle 64.2 deg C

Confirmed at thermostat temperature was below <82 deg C for all cycles

Still no Daily Log Sheets are being maintained for the fridges or washer
This was cited in the previous inspection
