Observation (CORRECTED DURING INSPECTION): 1) Bowl of rice measured at approximately 13.6C in a tightly packed sliding door cooler. This bowl was meant for staff lunch.
2) Bag of chopped vegetables stored above prep line in prep cooler
Corrective Action(s): Ensure to keep cold potentially hazardous foods stored at 4C or less to prevent pathogenic bacteria growth and or production of their toxins.

Observation (CORRECTED DURING INSPECTION): 1) Mandolin cutter with encrusted debris on the blade
2) Wiping cloths stored on the table during the day

2) Wiping cloths are to be stored in a sanitizer solution to prevent the spread of contamination throughout the premises and employees hands

Observation: 1) Some sauce bottles wrapped with rubber bands and soiled paper towel
2) Top of lids for mayo noted with food debris
3) Handle of mayo scoop fell into the mayo product
Corrective Action(s): These type of observations lead to potential contamination of food and employees hands. A proper clean and sanitize will eliminate contamination from these surfaces.
