General sanitation is good.
In the back dry storage area, keep pellets off the yellow strip painted on the floor. Clean the spill on one area of the floor.
Bleach is available for warewashing.
Keep the handwashing sink clear so that it is accessible for handwashing at all times. A cutting board is obstructing the hand sink in the packaging area.
Foodhandling procedures appear to be sound. All items being handled in the meat cutting room (10C) requires further cooking at the restaurant level.
Refrigerate the canned spice sauce after opening.
Temperature of refrigeration is satisfactory.
