Min temperature by probe thermometer held over 10min shows 14.4C.
Operator's thermometer shows 56.5F.
Corrective Action(s): Operator moved all items to working cooler at 4C.
Fix cooler to ensure it reads 4C/40F and maintains food temperature at all times.
Monitor frequently and do not put food inside unless it reads 4C/40F.
