Observation: One large pot of pho soup stored in walk-in cooler measured at 62.5C. This large pot cannot be adequately cooled from 60-21C in 2 hours and 21-4C in 4 hours. Proper cooling procedures need to be taken with large quantities of items. This is a repeat violation. Further non-compliance will result in enforcement action.
Corrective Action(s): The following must be followed:
1)Portion out soup into more shallow containers
2)Stir soup with ice wands frequently
3)Do not enclose lids on products meant for cooling

Observation: One batch of bean sprout stored on ice is maintaing temperatures of 5-9C measured by probe thermometer. This was just placed out before the lunch rush for about 30 minutes. This is a repeat violation. Further non-compliance will result in enforcement action.
Corrective Action(s): 1) Do not store cold potentially hazardous foods above 4C for more than 2 hours
2)Obtain smaller containers for the bean sprouts to be held under 4C

Observation: -2 handwashing stations do not have hot water. Water is measured at 25-30C. This is not acceptable and needs to be corrected immediately.
