205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Significant amount of portioned "Tartar Sauce" stored at room temperature (near the entrance door/take out/ as well as behind the walk-in freezer near the storage shelf. The operator claimed that it was just prepackaged.
Corrective Action(s): If a product label stated - "keep refrigerated after opening" - the product must be kept refrigerated (as per label recommendation). Ensure that all food stored safely.
Note: Next time, if no proof that food stored less then 4 hours at room temperature - all will be discarded

Observation: Dishwasher at 0.0 ppm of chlorine solution at the time o inspection.
Corrective Action(s): Immediately repair the dishwasher.
Use take out containers and single use utensils for now.
Keep all dirty dishes until the dishwasher dispense 50 ppm of chlorine to properly clean and sanitize all of it.

Observation: 1. Many food products in coolers are uncovered.
2. Chemicals (Clorox) stored on food (the silver star flour 20 kg bag)in dry storage.
Corrective Action(s): 1. All food must be properly covered to ovoid contamination.
2. Chemicals/cleaning agents must be stored away from food.

Observation: Rodent droppings observed in dry storage area (behind the floor mixer/corner).
Corrective Action(s): Please clean rodent droppings/sanitize/ and rectify the issue.
