Observation: Dust build up observed on ceiling tiles adjacent to return vents over several food preparation surfaces.
Food debris observed on guard of meat slicer
Food debris observed on both the exterior and interior of microwave oven
Food debris observed on cooler handles on cooler below the microwave oven
Corrective Action(s): Clean ceiling tiles and return vents more frequently ie every 3 months.
Ensure students have been trained on how to properly clean both the blade and guard of the slicer. Ensure a flashlight is available to check the work.

Observation: Wire rack shelving inside the walk in cooler observed to be rusted with paint flaking. This is an outstanding item listed in report on November 16, 2021 .

Corrective Action(s): Replace wire rack shelving
Clean compressor fins regularily ie monthly.
