Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
All temperature met health requirements:
- Cooler = 3.6 degrees Celsius.
- Freezer = -19.2 degrees Celsius.
- Steam table for hot holding maintained above 60 degrees Celsius.
- Sandwich prep cooler = 4 degrees Celsius.
- Under-counter cooler = 3.2 degrees Celsius.
All cold holding units equipped with thermometers.
Prep sink equipped with hot/cold running water and drain plugs.
Foods covered and protected from contamination.
Meats stored on bottom shelf in cooler.
Equipment, dishes and utensils storage organized and stored in a sanitary manner.
Ventilation canopy maintained in a sanitary condition.
High temperature dishwasher sanitizing with 73.4 degrees Celsius at the dish level after the final rinse cycle.
2-compartment sink available for manual warewashing. Drain plugs available.
Concentration of sanitizer at dispenser measured to be within acceptable limits (272 ppm to 700 ppm DDBSA and 704 ppm to 1875 ppm Lactic Acid).
