Comments

Coolers are at 4 C or colder. Provide a new thermometer in the sushi display cabinet if your thermometer is not accurate.
Sushi rice - is made every 2 hours. This is required as it is kept at room temperature after adding vinegar.
Tempura batter is not being stored in fridge and was apparently made recently. Store in fridge or use ice to reduce temperature. Make small volumes frequently.
Hot holding soup and rice - > 60 C - good.
Freezer - for storing salmon is at -24 C. Also, supplier receipt advises that salmon and seafood has been kept at -20C for 7 days by supplier.
Chlorine is available for sanitizing wiping cloths and food contact surfaces.
Dishwasher has a final chlorine sanitizing rinse (50ppm measured after the final rinse).
