-mini-front cooler 4 deg C

-High temperature washer 73.8 deg C at plate level for the second wash -ensure to warm-up for one cycle prior to placing ware there

Chemical Controls:
-bleach sanitizer bucket >100ppm as per test strips
-Lysol sanitizer wipes also in use -okay (only use basic non-scented versions)

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

General Sanitation good
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests -operator is self-monitoring facility with snap traps -okay

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
