Observation (CORRECTED DURING INSPECTION): Scoop was stored inside the ice machine.
Corrective Action(s): Do not store scoops in the ice machine. Store the scoop outside in a sanitary manner. Staff removed the scoop from ice machine and stored it in a separate container outside the ice machine.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings noticed in one of the corners in back storage area.
Corrective Action(s): Ensure that facility is maintained in sanitary condition to prevent the pest problem. Remove the rodent droppings from the affected area. Use 1 part bleach to 9 part water solution to dampen and remove the droppings. Proper PPE should be worn during cleaning.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Walk-in cooler maintained at 2C.
- Walk-in freezer at -12C.
- Sandwich prep cooler at 4C.
- Shredded cheese, lettuce containers are cold held on ice and discarded after every 4 hours. Colour coded stamps were used for time tracking.
- Hot holding units recorded at 60C or above.
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer pails available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- Nozzle of pop dispenser was found in sanitary condition. As per staff, the nozzles are disassembled and washed at the end of the day.
- No visible dirt/grime observed on ice machine.
- Washrooms maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or covered inside coolers.
- Back storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
