Observation (CORRECTED DURING INSPECTION): Two small cartons of 2% partially skimmed milk with internal temperatures of 20-21 degrees C observed on the counter of the preparation cooler.
Corrective Action(s): Discarded. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Containers of gravy and teriyaki sauce observed on the table in the back food preparation area. Internal food product temperatures observed to be 27 degrees C and 37 degrees C respectively. Operator stated they are extra not for use in the front hot holding unit.
Corrective Action(s): Discarded. If extra hot hold above 60 degrees C. If cooling is required cool from 60 to 20 degrees C in 2 hours then from 20 to 4 degrees C in 4 hours.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): At the time of inspection bleach sanitize in container well over 200ppm. This is a recurring issue.
Corrective Action(s): Ensure a 100ppm bleach sanitizer solution is available for use at all times. Dilute 1 oz of regular unscented bleach to 1 gallon of water. Place this container on the food preparation table and store all wiping cloths in the soution when not in use.

Observation:
At the time of inspection designated hand wash sink obstructed from use. Dislodged liquid soap dispenser and customer returned pop cans (still sealed) in sink along with a box of packaged ketchup.

At the time of inspection staff washroom hand sink also obstructed from use. Sink filled with bucket full shoes, cloths, cleaning supplies, floor mat, etc.
Corrective Action(s): Ensure all hand sinks are clear of obstructions and provided with liquid soap and paper towels at all times.

Observation (CORRECTED DURING INSPECTION): At time of inspection turkey and fish observed thawing at room temperature. Internal food product temperature still less than 4 degrees C.
Corrective Action(s): Operator placed the turkey back in the walk in cooler and battered the fish for deep frying. Ensure all frozen potentially hazardous foods are thawed in the cooler or under cold running water.

Observation: Flies observed in the back food preparation area.
Corrective Action(s): Organize the back food preparation area. Remove all unnecessary items. Clean underneath and behind all equipment immediately. Contact a pest control company to address fly issue if necessary.

Observation: Premise again not maintained in a sanitary condition with numerous card board boxes left around the premise. Large quantity of containers and utensils still waiting to be washed at dishwashing area. Soiled cardboard used to line the shelving unit in the back.
Corrective Action(s): As discussed in previous inspection discard all unnecessary items from the premise. Wash dishes/utensils quickly. Discard garbage bins filled with organic matter quickly to discourage pest activity. Correct immediately.

Observation: Light cover missing for a light fixture in the back food preparation area.
Corrective Action(s): Install a light cover for the light fixture. Ensure premise is maintained as per approved plans. Correct by June 17, 2020.

Hand sinks after correction available for use. Liquid soap and paper towels provided.
Bleach sanitizer after correction available for use.
Dishwasher registers 79 degrees C at the plate surface during the final rinse cycle.
Walk in cooler at 4 degrees C.
Preparation cooler inserts and lower section at 4 degrees C.
All freezers except the chest freezer next to the shelving unit at -15 to -16 degrees C. Chest freezer next to the shelving unit at -7 degrees C. Adjust temperature to colder setting.

Discontinue self serve dispensing of water due to COVID-19. Place the water tower in the kitchen and allow only staff to dispense water.
