Observation (CORRECTED DURING INSPECTION): Student was observed handling washed and sanitized baking sheet with shirt sleeve.
Corrective Action(s): Ensure student handle washed and sanitized equipment and utensils in a sanitary manner to prevent potential cross contamination of equipment and utensils. Baking sheet was washed and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Severely dented can of pumpkin was found in the store room.
Corrective Action(s): Ensure dry storage foods are checked on a regular basis and all dented containers discarded. The safety of dented canned foods cannot be guaranteed. Dented can was discarded at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Display and under counter coolers are currently not in use.
-Upright freezers were at -16C and -18C.
-Cooked foods were greater than 74C.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 400ppm.
-Sanitizer pails properly labelled and tested at 200ppm. Sanitizer is changed hourly.
-General food storage practice good at the time of inspection. Foods stored off the floor and covered.
-Equipment sanitation satisfactory. Ensure slicer completely disassembled for cleaning and sanitizing after each use.
-Ice machine was found to be clean and well maintained.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until 2023-09-16
