Observation (CORRECTED DURING INSPECTION): Large batch of chicken curry was left out ot cool at room temperature. Internal temperature of food was measured at 45-50C after two hours of cooking.
Corrective Action(s): Reheat the food to 74C. Portion out food in smaller containers and use ice wands to enable faster cooling.
Cool food from 60C to 20C within 2 hours and from 20C to 4C in four hours in the cooler
