- Sandwiches, salads and pizzas (bake at home) are prepared in this area
- Prep room is temperature controlled. Temperature was 10C.
- General sanitation of area was satisfactory. Minor amount of debris/residue noted under prep tables - ensure this area is cleaned as part of the regular cleaning schedule.
- Handsink was supplied with liquid soap and paper towel
- Dishes washed by manual dishwashing method at warewashing sinks. Quats sanitizer (200ppm) present from dispenser at warewashing sink for sanitizing step.
- Quats sanitizer (200ppm) present in spray bottles for sanitizing food contact surfaces.
- Cutting boards/food prep surfaces appear clean and maintained.
- Coolers were operating at 4C or colder
- Freezer -15C
- Food was stored in a manner to prevent contamination (ie wrapped/covered) and labelled with the date.
