Observation: The detergent pump on the high temperature mechanical dishwasher not operational at the time of inspection. Dishwasher final rinse not reaching 82C at the manifold or 71C at the plate final rinse temperature.
*Obtain professional repair services for the dishwasher. The deteregent pump must dispense detergent.

Observation: The following were observed during the inspection
- The high temperature dishwasher has a non-operational rinse sentry feature. Which allows the dishwasher to run without reaching adequate temperature (71C final rinse at plate, 82C at manifold)
- The cold holding cooler condensate drain was discharging into the cooler interior
- Ecolab U.V. fly trap observed with improperly sized sticky trap
- Lighting without the kitchen is inadequate for the operation
*Obtain repair services for the mechanical dishwasher to ensure the rinse sentry function is operational.
*Repair condensate drain in cooler
*Replace sticky pads in Ecolab U.V fly trap with suitable pads
*Replace light bulbs and ensure lighting reaches 540LUX
- Upon further investigation operator found hot water was turned off. Final rinse reaching 87C at manifold
