209 - Food not protected from contamination [s. 12(a)]
Observation: The following was observed:
1. Ice scoop is missing handle. Handle appears to have broken off.
2. Paper bags of spices stored directly on concrete floor of spice room.
3. Spice scoops are not stored in a designated area to protect from potential contamination. Scoops were observed stored on wire racks near/among non-food items such as documents.
Corrective Action(s): 1. Ensure a durable, smooth, non-absorbent, easy-to-clean scoop with a purpose-built handle is available for the ice machine. Reminder to ensure that scoop is being stored in a manner that protects from potential contamination. Date to be corrected by: February 8, 2019.
2. Ensure that food products are not stored directly on the floor to protect food from potential contamination and to facilitate cleaning. Install additional shelving if required. Date to be corrected by: February 6, 2019.
3. Ensure that scoops with purpose-built handles are stored in a designated area and are protected from potential contamination. Date to be corrected by: Today.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 1. A one to two inch gap was observed at the bottom edge of the loading dock door located closest to the West side.
2. A buildup of food debris observed on floor of smoke room and dried food residue was observed on exterior of spice bins.
Corrective Action(s): 1. Ensure that no gaps are present as these are potential pest entry points. Date to be corrected by: February 8, 2019.
2. Ensure that all food debris and residue is properly cleaned. Ensure that sanitation plan is being followed to limit accumulation of food debris and/or residue as this is a potential pest attractant. Date to be corrected by: February 8, 2019.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Several labels located on dry storage bins in spice room were faded and/or worn off. One bottle of mineral oil located in production room was not labeled.
Corrective Action(s): Ensure that all items noted above are properly labeled to identify contents to prevent accidental mixing or misuse. Date to be corrected by: February 6, 2019.

Comments

Routine inspection conducted:

- Coolers and receiving at 4 degrees C or less
- Freezer temperature at -18 degrees C or less
- Production areas at less than 10 degrees C (6 degrees C)
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels
- Three compartment sink is supplied with hot and cold running water, three sink plugs, and a chemical dispenser system with hose attachment. Sanitizer from dispenser was tested at 200 to 400 ppm quaternary ammonium compounds (quats).
- Ice machine was observed to be in clean condition. Note: Reminder to ensure ice machine is being cleaned and sanitized as per manufacturer's directions.
- It was stated by management that there are no changes to food operations or equipment. No changes to approved food safety and sanitation plans.
- It was stated that food processing equipment in cold areas is taken apart, washed, rinsed, then sanitized between animal species and at the end of the day.
- Premises is serviced by a licensed pest control operator. Pest control reports reviewed at time of inspection. Most recent report indicates no pest activity.
- Daily temperature logs reviewed at time of inspection. Copies of additional records for meat production (e.g. curing) to be forwarded to the Environmental Health Officer by February 5, 2019. Contact information provided.
