Observation (CORRECTED DURING INSPECTION): 1. Chicken strips at top-left corner of hot-holding cabinet was only at 130F and did not change temperature after 20 minutes, cooked >= 2 hours ago (Min: 140F)
2. Pizza on bottom shelf at 130F (Min: 140F)
Corrective Action(s): 1. Chicken strips and pizza were discarded at time of inspection. Ensure that no chicken strips are double-stacked and that all hot-holding plates are working. Refrain from using the top-left corner of the hot-holding unit until a follow-up inspection has been conducted to ascertain that it can maintain food products at an internal temperature of 60C or greater.
2. Do not use the bottom shelf of the hot-holder for pizza until it is verified, through a follow-up inspection, that it can consistently maintain 140F or greater.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Walk-in cooler at 2C
- Condiment cooler at 3-4C (top & bottom)
- Display cooler at 2-4C
- Undercounter freezer at -14C
- Stand-up freezer at approximately -10C
- Retail chest freezer at -19C
- Taquito hot-holder at 60C or above
- Temperature logs are maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer spray bottle at 200 ppm QUATS
- Dispenser at 3-compartment sink releases QUATS at 200 ppm
- Tongs, pizza cutters, stored in plastic container in sanitary condition

3. Storage
- Food products are all stored at least 6" off the floor - good
- All food products are covered when not in use in original packaging or in food-grade containers - excellent
- Chemicals are stored separately from any food products
- General organization of store is good - area is maintained in good sanitary condition and storage of items inside all coolers and freezers is organized

4. Pests
- No visible signs of recent pest activity at time of inspection. Mechanical traps checked did not reveal any rodents inside
- Last pest control report from April 8, 2019 also did not note down any issues with sanitation or pests

5. Retail
- No medication was beyond their expiry date
- All food products neatly organized on shelving

6. Administrative
- Permit posted
- Manager and employee has valid FoodSafe 1
