General comments:
- Sanitation of premise is adequate; ensure frequent cleaning of meat slicer
- Cooler and freezer temperatures are satisfactory
- Make sure that all handwashing stations are stocked with paper towels, soap and hot/cold running water
- High temp dishwasher reached 71C; make sure that water used for pre-rinsing is frequently changed.
- No sanitizer present; ensure there is 100ppm chlorine or 200ppm quats sanitizer always present
- Make sure all food in coolers and freezers is labelled/has expiry date.
