Observation (CORRECTED DURING INSPECTION): Number of items inside glass door cooler were at an ambient temperature of 16C:
1. Soft packaged cheese (approximately 500 g total)
2. Kirkland Cheddar Jack Cheese
3. Kirkland Mozarella Cheese
4. Package of Mexican Chorizo Sausage (5 sausages)
5. Kirkland Homogenized Milk (3.78 L)
6. Soft Blend Dairy Spread (1 box approximately 3 kg)
Corrective Action(s): Aforementioned items were discarded into the back dumpster at time of inspection. All potentially hazardous foods must be kept at a temperature of 4C or less. Milk was discarded into the sink.

Observation: Approximately 10-15 flies observed on wall outside kitchen.
Corrective Action(s): Remove or eliminate the flies from the facility, continue monitoring for fly activity, and consider implementing fly traps (e.g. UV fly traps) and consulting a professional pest control company. It is important to keep your premise pest free to avoid contamination of food products.

Observation: Stand-up display cooler near front of store at an ambient temperature of 16C.
Corrective Action(s): All potentially hazardous foods inside the display cooler were discarded at time of inspection. Repair the cooler so that it can consistently maintain a temperature of 4C or less.

Comments

Routine inspection conducted. Facility not in service at time of inspection. The following observations were made:

1. Temperatures
- Beverage cooler at 4C
- Stand-up display cooler at front of store at 16C (see violation code above)
- Stand-up display freezer at -18C
- Domestic coolers at 4C
- Domestic freezers at -18C
- Cooling units equipped with accurate thermometers
- No hot-holding conducted at time of inspection

2. Hygiene and Sanitizing
- Handwash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in kitchen and restroom
- Restroom is well maintained
- 3-compartment sink sanitizing compartment contains 50 ppm chlorine
- Reminder: Have a 200 ppm chlorine sanitizer spray bottle when facility is in operation
- Utensils and equipment generally well maintained in sanitary condition

3. Storage
- All food items neatly stored at least 6" off floor for easy cleaning
- Shelving for food store products is well organized
- Dry storage goods are protected from contamination with tight-fitting lid, all products are covered or in their original packaging
- Dedicated janitorial room is present for mop bucket

4. Administrative
- Operator has FoodSafe 1 (renewed on July 16, 2018 - excellent)

Note: A follow-up inspection will occur to ensure that the stand-up glass cooler is adjusted to have a temperature of 4C or less
Reminders: Please discard cardboard boxes after receiving them from suppliers, do not store them in the coolers as they cannot be adequately cleaned and will absorb debris and moisture
