Observation (CORRECTED DURING INSPECTION): Steam table for the cooked rice was not turned on, temperature was 87F/31C. This is an unsafe temperature. Various dosa fillings stored at room temperature, also unsafe.
Corrective Action(s): Items have been discarded. This is a reoccuring violation. Ensure items are kept hot above 140F/60C to prevent health violation tickets from being issued at future inspections.

Comments

Ensure staffs are recording the temperatures on the log sheet and not just writing down their initials.
Thermometer for checks is available and accurate.
Do not use non-food grade plastic pail for moisture foods, especially pickles. Chemicals from dyes and plastic may leach into the food.
Floor under equipment in the kitchen is clean.
Sanitizer is detected in the two dishwashers.
Temperature of refrigeration units are satisfactory.
