Observation (CORRECTED DURING INSPECTION): No surface sanitizer available at the time of the inspection. Operator prepared 200ppm chlorine solution in a bucket to hold wiping rags at this time. Operator was advised to have all food prep surfaces sanitized using the solution at this time.
Corrective Action(s): Ensure to have 200ppm chlorine solution for each area (i.e. sushi bar/kitchen) at all times during operation. Have all food prep surfaces sanitized before initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at 4'C; Freezers operating at -18'C.
- Hot-holding units operating above 60'C.
- Ice machine in sanitary condition.
- High temperature dishwasher achieved 71.2'C at the plate level after final rinse.
- Sushi rice had pH measured at 4.2.
- No evidence of pest activity observed.
- Washrooms satisfactory.

NOTE: Ensure to have all cardboards removed from under-counter shelves as discussed at this time.
NOTE: Ensure to have rice scoops stored in ice water.
