- Freezer maintained below -18 degrees Celsius.
- Hot holding maintained above 60 degrees Celsius.
General food storage practices very good:
- All food items covered and protected from contamination.
- All food items stored off the floor.
- Food items organized in all storage areas.
QUAT sanitizer in all spray bottles = 200 ppm.
High temperature dishwasher sanitizing with >71 degrees Celsius at dish level after final rinse cycle.
Ice scoop for ice machine stored in designated container.
