Observation (CORRECTED DURING INSPECTION): One bucket of sanitizer measured at 50 to 100 ppm quats.
One spray bottle labeled sanitizer had no detectable quats.
Corrective Action(s): Above-noted containers were refilled at the sanitizer dispenser and tested at 200 ppm quats. Ensure sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats or higher according to manufacturer's specifications). Change sanitizer as often as needed to maintain effective concentrations.

Routine inspection conducted:

- Walk in cooler at 4 degrees C.
- Glass beverage cooler at 3 degrees C
- Under counter (1-door) cooler at 3 degrees C.
- Preparation (2-door) cooler at 1 degree C (above) and 3 degrees C (below)
- Reach in (2-door) freezer at -20 degrees C
- Hot holding units (steam table, Alto Shams) at internal food temperatures of 60 degrees C or more.
- Probe thermometer is available on site for internal food temperature checks
- Temperature records maintained
- Food is protected from potential contamination. Raw animal foods and ready-to-eat foods are properly organized
- Low temperature dishwasher measured 41 degrees C and 50 to 100 ppm chlorine in rinse residual at utensil surface
- Three compartment sink supplied with hot and cold running water, three sink plugs
- Hand washing sinks are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels in dispensers.
