Observation (CORRECTED DURING INSPECTION): Hand washing station in staff washroom observed not supplied with hot water or paper towel during inspection. Staff turned on the hot water tap during inspection.
Corrective Action(s): Place roll of paper towel at the hand washing station in the staff wasrhoom immediately. Maintain all designated hand washing stations adequately supplied with hot and cold running water, liquid soap and paper towel at all times to ensure staff are washing their hands properly and at adequate frequency to prevent contamination of food.

Observation: General sanitation observed unsatisfactory in the following areas:
- Ventilation canopy observed with heavy grease
- Floors underneath cooking equipment observed with grease build-up
- Floors near the dishwasher and underneath the 2-compartment sink observed with some food/grease debris
Corrective Action(s): Degrease, clean and sanitize aforementioned areas to remove grease and food debris. Conduct regular cleaning to prevent build-up of grease/food debris. Once completed, submit photos of the aforementioned areas to the health inspector via email.

Routine Inspection Conducted
- Restaurant not in operation during inspection. Preparation being conducted.

Observations:
- Walk-in cooler at 2'C
- Stand-up freezer at -19'C
- No hot-holding during inspection
- All food stored covered and at least 6 inches off the floor
- Raw meat/seafood observed stored away from ready-to-eat foods
- Hand washing station in kitchen adequately supplied with hot and cold running water, liquid soap and paper towel
- Low-temperature chemical dishwasher measured at 100 ppm chlorine concentration with test strip
- 2-compartment sink available with drain plugs and bleach
- Chlorine test strips available on site
- Bleach sanitizer in spray bottle measured at 200 ppm chlorine with test strip
*Reminder: ensure spray bottle is adequately labelled and available during food preparation
- Glasswasher at bar measured at 25 ppm iodine concentration with test strip
- Equipment observed stored in a sanitary manner
- No signs of pest activity during inspection
- Permit posted in a conspicuous location on site
- FOODSAFE level 1 trained staff available on site

Notes:
- Preparation cooler along cooking line is currently not in use and not in service. Parts are on order. Adequate cooler space available in walk-in cooler.
