Routine inspection conducted:

Handsinks in the main prep. area, front servery area, and staff washroom were adequately supplied with liquid soap, hot and cold running water, and paper towels.
Dishwasher final rinse chlorine residual was at least 50 ppm at the plate.
Dishwasher final rinse chlorine sanitizer residual log was being maintained on daily basis.
One-door cooler was at 3.4 degrees C (4 degrees C / 40 degrees F or less).
Freezer component and chest freezer were at or below -18 degrees C / 0 degrees F.
Refrigeration units were equipped with thermometers.
Soups prepared recently on the stove top and being hot-held before for a short period of time before service were at or above 60 degrees C (actually measured above 80 degrees C).
A probe thermometer was available on-site.
100 ppm chlorine sanitizer was available in the bucket with wiping cloths.
Unscented household bleach was available on-site.
Chemicals were stored in a cabinet separate from food/food equipment.
FOODSAFE trained staff member was available.

The following requires your attention:

Please maintain accurate temperature records based on the thermometer readings. The cooler and freezer temperature settings to raise and lower the refrigeration temperature (numbers between 5 to 6) were incorrectly being recorded on the log sheet as the ambient temperature of the cooler and freezer. Refer to your food safety plan regarding the corrective action to follow if refrigeration temperatures ever exceed 4 degrees C.

Please contact the district EHO of Fraser Health if you have any questions or concerns.
