All coolers are at 4 C or colder. Check daily. Hot holding is >60 C. Hand washing stations have liquid soap and paper towels. Disposable gloves are also worn. Dishwasher has a chlorine final sanitizing rinse (50ppm detected). Chlorine is used to sanitize wiping cloths and work surfaces (spray bottle has 200ppm chlorine).
