Routine Inspection
- Hand wash stations stocked with liquid soap and paper towels. Do not use cloth towels to dry hands.
- Stand up cooler ambient air temperature below 4 degree Celsius
- Dishwasher final rinse has 50 ppm Cl. Sanitizer bottle changed during the inspection. Monitor and record sanitizer concentration regularly. Purchase Cl test strips. Rewash all dishes and utensils.
- 100 ppm Cl solution available in a spray bottle
- no hot holding at the time of inspection
- left over food is discarded at the end of the meal
- food safe trained staff available. Chef will be renewing his food safe level certificate next month.
