Observation (CORRECTED DURING INSPECTION): 1. **REPEAT** 2 door display cooler (Front) temperature fluctuated between 3.9 - 8.0°C during inspection. Unable to ensure potentially hazardous foods (indian sweets) stored in cooler is maintained at 4°C or less.
2. **REPEAT** 2 door prep table (nearest handsink) measured 4.9°C at time of inspection.
Corrective Action(s): 1. Do not store potentially hazardous foods in cooler. Potentially hazardous foods are to be stored in a working cooler (e.g. walk-in cooler, 3 door undercounter cooler (bar).
Product can be displayed in 2 door display cooler, but must be labelled "For Display Only" and not dispensed to public.

Observation (CORRECTED DURING INSPECTION): Mechanical dishwasher measured <10ppm chlorine at start of inspection.
**Corrected during inspection** After replacing container of sanitizer solution (bleach) and priming lines, measured 50ppm.

As it is unknown when sanitizer stopped reaching adequate concentration, all equipment in facility is to be washed and sanitized in dishwasher.

Observation: 1. Naan dough observed to be covered by black garbage bag. This is not a food-grade material.
**Corrected during inspection** Dough discarded as per food safety plan for handling contaminated foods.
2. Some products observed to not be covered in walk-in cooler at time of inspection. Cooked potatoes, fillet, various sauces.
Corrective Action(s): 2. All products are to be covered after cooling when in storage.

Observation: Fish filet stored on floor of walk-in cooler measured 9.0°C at time of inspection. Ambient temperature measured 1.0°C. This suggests fish has been at room temperature for an extended period of time.
Corrective Action(s): Foods are approved to be thawed in the following manner:
1. under cold running water
2. in the cooler
3. in the microwave (Must be used immediately afterwards)

Educate staff on proper thawing methods. Products that are not in use must be returned to a cooler that can maintain temperatures of 4°C or less.

Storage:
Most food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.
